If you love fudge as much as I do, you need a few microwave fudge recipes that you can whip up quickly in case of emergencies.

You know what I mean by emergency, don't you? You are having a sweet tooth attack and are just dying for some rich creamy chocolate fudge. Try these!

Be warned, though, that you may be tempted to overindulge. I whip up a batch of fudge and place it in the freezer - but that doesn't stop me. One of these days my teeth are going to get frostbite! :)

My Favorite Microwave Fudge Recipe

It may be embarrassing to admit, but this microwave fudge recipe is my favorite fudge recipe.  I make it for Christmas, birthdays, or any time I have a fudge craving. 

It's often hard to locate marshmallow cream here in Australia, so I sometimes bring some from the USA when I visit there, or stock up on the rare occasions they make it available at my local grocery store.

  • 3/4 cup butter (or margarine, but I definitely prefer butter!)
  • 2/3 cup evaporated milk
  • 3 cups sugar
  • 1 12 ounce package of chocolate chips
  • 1 tsp. vanilla
  • 1 7 ounce jar of marshmallow cream
  • (optional - nuts or peanut butter; I prefer the peanut butter)
  1. In a 4 quart microwave safe bowl heat the margarine on high for 1 minute or until melted. Add sugar and evaporated milk; mix well. Microwave on high for 11 minutes, stirring every three minutes and scraping the bowl well.

  2. Add the chocolate chips and stir until melted. Add the remaining ingredients and mix well.

  3. Pour into lightly greased baking pan. Cool at room temperature. Cut into squares.

When I make this recipe, I often make two batches.  The first batch is plain chocolate and the second batch contains peanut butter.  I usually use about a cup of peanut butter.

I have tried to double the recipe to save time.  Don't!!!  This is one of the microwave fudge recipes that does not double well.  It's better to just take the time to make a separate batch. 

If you want to try both flavors without making two batches, simply divide the fudge at the very last step.  Cut the amount of peanut butter down to suit your taste and the amount of chocolate peanut butter fudge you are making.

Double Good Chocolate Fudge Recipe

  • 1 (16 ounce) package of powdered sugar, sifted
  • 1 cup crunchy peanut butter
  • 1/4 cup plus 2 tablespoons milk
  • 1/2 teaspoon vanilla
  • 1/2 cup butter or margarine
  • 1 (16 ounce) package of powdered sugar, sifted
  • 1/4 cup milk
  • 1/2 cup cocoa
  • 1/2 cup chopped peanuts
  • 1 teaspoon vanilla
  1. Coat a 9 inch square pan with cooking spray. Line the bottom of the pan with wax paper and spray again. Set pan aside.

  2. Combine 1 package of powdered sugar, peanut butter, and 1/4 cup plus 2 T. of milk in a large microwave safe bowl. Stir well.

  3. Stir in 1/2 teaspoon vanilla. Cover with wax paper and microwave on high for 2-3 minutes. Spoon into pan.

  4. Place butter in microwave safe bowl. Microwave on high for 1 minute or until melted. Stir in 1 package powdered sugar, 1/4 cup milk, and cocoa.
    Cover with waxed paper and microwave on high for 2-3 minutes. 

  5. Stir in 1 tsp. vanilla and peanuts (optional).

  6. Spoon mixture over peanut butter layer and let set. Cut into squares and store in airtight container.

Easy Chocolate Fudge Recipe

  • 3 2/3 cups powdered sugar
  • 1/2 cup cocoa
  • 1/4 cup milk
  • 1/2 cup butter
  • 1 tablespoon vanilla
  • 1/2 cup chopped pecans, optional
  1. Combine powdered sugar, cocoa, milk, and butter.
  2. Microwave on high power until butter is melted, about 2 to 3 minutes.
  3. Stir until smooth. Blend in vanilla and pecans.
  4. Spread into a buttered 8-inch square pan. layer; cool and cut into squares.

This microwave fudge recipe was shared with me, and I  haven't given it a try yet.  I've made something similar on the stove top, but it took a long time to cook and stir.  Let me know your opinion on this version if you give it a try before I do.
